Keto Nut Butter Cookies

A low sugar, keto-friendly holiday (or anytime, really!) cookie

  • 3/4 cup Artisana Organics Gingerbread Pecan Butter or Chai Spiced Almond Butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda


  • Preheat oven to 350 degrees.
  • Line a baking sheet with parchment paper or a thin layer of coconut oil.
  • Combine all ingredients in a small mixing bowl.
  • Mix with spoon until smooth.
  • Drop a spoon size amount of dough onto cookie sheet, shaping into round disc.
  • Bake at 350 for 10 minutes or until edges are lightly browned.
  • Let cool before removing from cookie sheet.


Store in airtight container for up to 5 days.
Goes great paired with coffee!
