Keto Nut Butter Cookies
A low sugar, keto-friendly holiday (or anytime, really!) cookie

- 3/4 cup Artisana Organics Gingerbread Pecan Butter or Chai Spiced Almond Butter
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper or a thin layer of coconut oil.
Combine all ingredients in a small mixing bowl.
Mix with spoon until smooth.
Drop a spoon size amount of dough onto cookie sheet, shaping into round disc.
Bake at 350 for 10 minutes or until edges are lightly browned.
Let cool before removing from cookie sheet.
Store in airtight container for up to 5 days.
Goes great paired with coffee!
